'Mighty Marbled' beef is a brand created by Hannan Meats. It is from traditional breed cattle including Hereford, Angus, and Shorthorn.
It is hand-selected entirely on a quality basis, for texture and flavour and has to be well marbled. The beef is aged for a minimum of 5 weeks and dry aged in the Himalayan Salt Chamber.
The Himalayan Salt Chamber is a totally new concept this side of the World. There are 4 already in existence, 2 in the USA, 1 in Canada, and 1 in Australia. Hannan's is the first in Europe.
The therapeutic benefits of Himalayan Salt have been known for many years (the Chinese have been using it for over 1000 years). At between 150 and 250 million years old, the salt is mined entirely by hand in Pakistan. It varies in colour from white, to orange, to a multitude of pink shades and has a very high mineral content. However it’s benefits in the dry-ageing of meat are only a recent phenomenon.
Through a process called ionisation, the negative ions from the salt counteract the positive ions of meat, and result in a totally unique sweet and flavoursome end product. It is not the salt alone, but a combination of temperature, humidity, and light combined, that deliver supreme dry-aged meat.
There is a lot of science and technique behind this totally natural process, and for Hannan's it is the culmination of over 10 years of research, and 30 years of experience finally coming to fruition.
